Main: Cochinita Pibil. This traditional Yucatecan pork dish has first been marinated with achiote seeds, garlic, spices and citrus juice, then wrapped in banana leaves and smoked for 8 hours. The tender meat is then pulled and served with hot hand-made tortillas and pickled agave onion, cilantro lime rice and avocado.
Dessert: Molten lava cake with candied bacon.
